Rump Steak Recipe

Chargrilled steak and bacon sandwich

Ingredients

  • 100g/3½oz rump steak
  • salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 3 rashers smoked streaky bacon
  • 2 slices ciabatta

Preparation method

  1. Season the rump steak with salt and freshly ground pepper. Heat a griddle pan, brush the steak with the olive oil and chargrill the steak for 4-5 minutes on both sides, or until golden-brown and cooked to your liking. Remove from the pan to rest in a warm place.
  2. Cook the bacon on the griddle until crisp. Remove the bacon from the pan and leave in a warm place.
  3. Toast the ciabatta bread on the griddle for 2-3 minutes each side, or until golden-brown.
  4. To serve, put one piece of toasted ciabatta on a plate and thickly slice the steak. Arrange the steak slices and the bacon on top of the ciabatta. Top with the other slice of ciabatta to make a sandwich.

Sautéed steak with garlic and parsley

Ingredients

  • 1 tsp olive oil
  • ½ rump steak, cut into thin strips
  • 1 garlic clove, peeled and chopped
  • ¼ spring onion, cut into rings
  • salt and freshly ground black pepper
  • 1 tbsp chopped fresh flatleaf parsley

Preparation method

  1. Heat the oil in a non-stick frying pan and sauté the steak strips for 1-2 minutes. Stir in the garlic and spring onion and continue to cook for a further two minutes.
  2. Season to taste, remove from the heat and stir in the fresh parsley.
  3. To serve, transfer to a serving plate.
